Tasty heart-winning Tex-Mex dip recipe for super bowl 2020. Slow-cooked healthy, cheesy dip.
1 tsp olive oil (extra virgin preferred)
1 green bell pepper (normal sized, roughly chopped)
1 onion (small sized, roughly chopped)
1/2 tsp cumin (ground)
1/2 tsp paprika
1/4 tsp garlic powder
15-oz diced tomatos (1 can)
15-oz Pasturized Cheeze (Cheddar, gouda, Swiss, parmesan, all are fine)
1/4 cup milk (whole milk preferred)
15.5-oz black beans (drained)
1 cup corriander leaves (freshly chopped, keep a 1/2 cup additional cilantro for serving)
4 tsp hot sauce
8 oz. shredded cheese
2 avocados (diced)
Tortilla chips for serving
Add olive oil to a skillet and heat on medium. Once the oil is hot enough, add the onion and bell pepper. Continue cooking with occasional stirring for 6 minutes. Add the cumin, paprika, and garlic powder and cook with stirring for 2 minutes until fragrant.
Into the slow cooker, add onion, tomatoes, pasturized cheese, and milk.
Cook on low for about 2 hours until bubbly. Add the black beans, corriander and hot sauce and stir for a good mix. Add the shredded cheese and stir until melted.
Top with avocado, garnish a layer of corriander, dash hot sauce and serve with tortilla.
If you can’t afford 2 hours, cook on high heat for 1 hour instead.
